I made this recently to take to a friend who just had a baby and I LOVED it! So much that I had to write it down here to make sure I could find it again. AND blueberries are in full swing here, all the more reason to try every new blueberry recipe I can find! This is an easy recipe that comes together quickly and you can make it the night before you need it!
Here’s the recipe!
Blueberries and Cream Bake!
1 loaf cubed french bread
8 ounces softened cream cheese
1/3 cup sugar
two large handfuls of blueberries {or more if you like}, tossed lightly with flour
cinnamon
8 eggs
1 1/2 cups milk
3/4 cup maple syrup
1 teaspoon vanilla
6 tablespoons melted butter
Spray a 13 by 9in dish with non-stick spray.
Layer one half of bread cubes in baking dish.
Cream together sugar and cream cheese and spread over layer of bread. A bit tricky but doable! Add blueberries over cream cheese. Add remaining bread. Sprinkle with cinnamon to your liking. Mix remaining ingredients and pour over bread; press bread with spatula to saturate. Cover and refrigerate overnight.
Bake at 350 degrees F for 45 to 50 minutes or until set and golden.
